I love to make bread by hand but when your in a rush this recipe is quick, easy and never fails.
Handmade bread brings a special kind of joy, but life can be busy! When you're short on time, this quick and easy bread recipe will impress and satisfy. This delicious homemade loaf pairs perfectly with your favourite dips, makes delightful sandwiches, and is even a fantastic base for toasted pizza sandwiches!
Using a Panasonic Bread Maker elevates the experience, as the bread produced is always tastier than store-bought options. If you find that you won’t consume the entire loaf within a few days, simply slice it up and freeze it for later use. I often prepare enough bread for the week ahead, ensuring that my family always has quick access to toast and sandwiches. Enjoy the convenience of fresh home-baked bread with minimal effort!
One Loaf of Bread.
Ingredients:
310 ml dairy free milk (we use rice milk)
2 tbsp. tomato puree
2 eggs beaten
1 tsp cider vinegar
2 tbsp. vegetable oil
60 g honey
1 1/4 tsp sugar
150 g rice flour
300 g potato starch
2 tsp chilli powder
2 tbsp. herbs of choice
2tsp xanthan gum
2 1/2 tsp yeast
Method:

Menu ‘13’ - ‘Medium or Dark Crust’ (1 hr 55 minutes). Timer not available.
Beat the eggs, tomato purée, and milk together, then add the mixture to the bread maker.
Continue to add the ingredients to the bread maker in the order listed.
Adding them in the wrong order may result in insufficient rising of the bread.
Switch the bread maker on and select the appropriate menu.
Follow the instructions provided by your bread maker.
Once the bread has finished baking, promptly remove it from the bread pan and carefully shake it out onto a cooling rack.
Don’t worry if the kneading blade remains in the loaf; I recommend waiting for the bread to cool before gently removing the kneading blade.
Remember to switch off the bread maker.
Store your bread in a cool, dry place and consume it within two days.
Additional Notes:
Some flour may remain on the sides of the loaf, but this is completely normal.
Allow the loaf to cool before slicing it (if you can resist!).
If you prefer a milder loaf, simply reduce the amount of chilli you add to the recipe. My youngest isn't a fan of spice, so I often make two loaves and freeze them both: one with less spice for our little one!
I use dried mixed herbs, but feel free to incorporate your favourite herbs into this recipe. Coriander or basil also add a delightful flavour to the loaf.
