Easter Biscuit

Delicious Gluten-Free and Dairy-Free Easter Biscuits: A Perfect Memory in the Making!

Delightful gluten-free and dairy-free Easter Biscuits that bring back cherished childhood memories! Every year, my family and I gathered in the kitchen to whip up these sugary treats, and I'm thrilled to continue this joyful tradition. Enjoy a taste of nostalgia with this wholesome recipe that combines fun, flavour, and a sprinkle of love!

Makes approximately 10 (depends on cutter size)

Ingredients:

125 g dairy free spread

75 g caster sugar

1 egg

225 g gluten free plain flour

1/4 tsp mixed spice

1/2 tsp ground cinnamon

100 g currants, raisins or mixed peel

Caster sugar for top.

Method:

Preheat the oven to 190°C / 170° Fan / 375°F / Gas Mark 5.

Lightly grease or line several baking sheets.

In a bowl, combine the butter and sugar, and beat until light and creamy. Gradually incorporate the egg into the mixture.

Sift the flour and spices into the bowl and mix until combined.

Once blended, add the raisins and stir again.

Work the mixture into a firm dough, kneading lightly.

Roll out the dough on a lightly floured surface to a thickness of approximately 0.5 cm. If the dough is too sticky, gradually add more flour and knead it in.

Cut out into the shape you desire. A 10 cm cutter will make approximately 10 biscuits.

Place onto the baking trays, and gather, knead, and re-roll any scraps to cut out additional biscuits until all the dough is used.

Bake in the preheated oven for 15 minutes, or until golden brown.

Once removed from the oven, sprinkle caster sugar over the biscuits.

Allow them to cool on the tray for 5 minutes before carefully transferring them to a wire rack to cool completely.

Additional Notes:

Add Zest: Incorporate the zest of an orange or lemon to give the biscuits a fresh, citrusy kick that screams springtime.

Use Almond Flour: Swap out some of the regular flour for almond flour to give the biscuits a nutty flavor whilst also maintaining the gluten-free option.

Spices Galore: Consider adding spices like cinnamon or nutmeg for a warm undertone that complements the sweetness of the raisins.

Decorate with Icing: Glaze the finished biscuits with a light icing and sprinkle colorful edible flowers or candy to give them an Easter-themed look.

Surprise Twist: Mix in some white chocolate chips along with the ingredients for an extra layer of sweetness and a real treat for the taste buds.

Creative Shapes: Instead of traditional rounds, use Easter-themed cookie cutters to create bunnies, eggs, and flowers that will make the biscuits more festive.

Herbal Infusion: For a sophisticated touch, consider infusing the dough with lavender or rosemary for a unique flavour profile that’s refreshing.

Our love for photography started on our travels. We wanted to capture images of the areas we travelled to both for our own records and for our family back at home. Previously an IT Manager my skill set has come in very handy as I am both a Health Coach and also offer consultancy for small business starts up and fellow Health Coaches. This has included building websites and online profiles.

Our Family

Family is everything to me! We have a family of four boys where the age difference between the youngest and the eldest is 18 years. Two of our sons are also Gluten Free and Dairy Free. Emma is a Health Coach who specialises in helping individuals and families achieve their health and wellness goals. Ian runs his own business which began developing a Race Timer for diecast model cars.
