Chocolate Chip Cookies

Delicious Gluten-Free and Dairy-Free Chocolate Chip Cookies: make them giant if you wish!

I used to adore visiting the shopping malls and treating myself to those enormous cookies. You know, the giant ones that melt in your mouth and leave you wishing they would last forever. I suppose my love for cookies, cakes, and all sorts of delicious treats runs deep! However, transitioning to a gluten-free and dairy-free lifestyle was quite the shock for me! Luckily, I’ve discovered a fantastic recipe for giant chocolate chip cookies that you simply must try.

Makes about 8 giant cookies or a lot more smaller ones!

Ingredients:

125 g dairy free spread

75 g soft light brown sugar

50 g caster sugar

1 egg beaten

175 g gluten free self raising flour

100 g gluten free and dairy free chocolate buttons or chocolate chunks

Method:

Preheat the oven to 180°C / 160° Fan / 350°F / Gas Mark 4.

Lightly grease or line several baking sheets.

In a bowl, place the butter and sugar, then beat together until light and creamy. Gradually add the egg to the mixture, beating well.

Sift the flour into the bowl and fold it in until combined.

Once mixed, add the chocolate and stir again.

Dollop 8 heaped spoonfuls of the mixture onto a baking sheet, shaping them into rounds and flattening them slightly. Ensure they are spaced well apart.

Bake in the oven for 20 - 25 minutes until golden brown.

Leave them on the tray for 5 minutes to cool before carefully transferring them to a cooling rack.

Additional Notes:

Ensure there is ample space between the cookies on the baking sheet, as they tend to spread significantly—this varies depending on the gluten-free flour used.

If chocolate isn't your favourite, feel free to swap it out for some raisins or cherries.

I prefer using an ice cream scoop to dollop the mixture onto the baking tray for even portions.

To change your chocolate chip cookie recipe, consider the following variations:

  • Flour Alternatives: Swap some or all of the gluten-free flour with almond flour, or oat flour for a healthier twist.

  • Sweeteners: Replace granulated sugar with coconut sugar or honey for a different sweetness profile. For a sugar-free option, try using stevia or erythritol.

  • Mix-ins: Add chopped nuts like walnuts or pecans for crunch, or toss in dried fruits like cranberries or cherries for a chewier texture.

  • Extracts: Experiment with different extracts such as almond, orange, or peppermint to enhance the flavour.

  • Cacao Nibs: Substitute some of the chocolate chips with cacao nibs for a more intense chocolate flavour and added health benefits.

  • Spices: Sprinkle in a pinch of cinnamon or nutmeg to warm up the flavour profile, perfect for a cosy vibe.

  • Oats: Incorporate rolled oats for added fibre and a heartier texture, making your cookies more filling.

  • Nut Butters: Replace some of the butter with peanut butter, almond butter, or cashew butter to introduce a nutty taste and create a softer texture.

  • Vegan Version: Substitute the butter and eggs with coconut oil and flaxseed meal mixed with water to make a vegan-friendly cookie.

  • Chill the Dough: Allow the dough to chill before baking. This deepens the flavour and helps create a thicker cookie.

  • Salt Flakes: Top cookies with sea salt or flaky salt just before baking to enhance the sweetness with a salty contrast.

  • Texture: For a chewier cookie, add an extra egg yolk or slightly underbake them for a moist centre.

Each of these options can give your classic chocolate chip cookies a unique twist, catering to various dietary preferences and flavour palettes!

Our Family

Family is everything to me! We have a family of four boys where the age difference between the youngest and the eldest is 18 years. Two of our sons are also Gluten Free and Dairy Free. Emma is a Health Coach who specialises in helping individuals and families achieve their health and wellness goals. Ian runs his own business which began developing a Race Timer for diecast model cars.
