Ingredients:
2 whole skinless, boneless chicken breasts, butterflied
8 oz plain dairy-free yoghurt
1 1/4 cup coriander (cilantro) finely chopped
1/2 cup fresh lime juice
Dash of cayenne pepper
I clove of garlic minced
1 large ripe mango, peeled, finely diced
Method:
Preheat the oven to 190°C / 170° Fan / 375°F / Gas Mark 5.
To butterfly a chicken breast, lay it flat on a cutting board with your hand on top of it. Then, using a sharp knife, make a horizontal cut on the thicker side of the breast, slicing through the middle of the breast but not all the way through the other side. Open up the breast like a book and it's ready to be cooked.
Marinate chicken breast in a mixture of yogurt, cilantro, lime juice, cayenne pepper, and garlic for at least an hour.
Combine 1/4 cup yogurt, 1/4 cup of coriander, half of the lime juice, cayenne pepper, and garlic. Marinate chicken breast in the mixture for at least an hour.
While the chicken is marinating, use a blender to puree together the remaining yogurt, two-thirds of the cubed mango, half a teaspoon of lime juice, and one cup of cilantro.
To bake chicken, you can use a glass baking dish and cook it for 25-30 minutes.
Place the chicken on serving plates, pour the sauce over them, and then sprinkle mango on top. Serve extra sauce on the side.
To add more flavour to your dish, decorate it with additional cilantro and lime. After that, give it a taste and adjust the seasoning according to your preference.
