Cook’s Hamburgers

Why not serve the family some hamburgers and hide some nutritious vegetables in them that they may not have otherwise eaten! This can also be frozen so it’s an easy meal at the end of a long day.

Serves 4

Ingredients:

750g lean minced beef

1 small onion

1 tbsp. capers

2 medium-sized beetroots

1 large potato

Salt and pepper

1 egg beaten

Flour for coating

Oil of choice for frying.

Method:

Prepare the vegetables.

Peel and finely chop the onions

Drain and finely chop the capers

Cook the beetroot and then carefully peel and finely chop it. If it has just been cooked then remember it will be hot so be careful when handling it.

Peel the potato and then boil it. Once cooked, mash with 1 tbsp. butter and 2 tbsp. cream or milk.

Place the beef, onion, capers, beetroot and potatoes in a large bowl and mix well.

Season with salt and pepper and mix again.

Add the egg and mix. This will help bind the mixture together.

Shape into four large hamburgers and flatten them with floured hands.

Fry on each side until cooked through and golden brown.

Additional Notes:

Add herbs to the recipe or some spice.

Serve traditionally with lettuce, sliced tomatoes in a hamburger bun, or serve in lettuce leaves.

Cook smaller patties and serve on cocktail sticks with small chunks of onion, tomato and relish.

Use any type of minced meat in this dish.

Freezing Notes:

Open flash freeze on a tray until solid. Then wrap each individually in aluminium foil before packing in a labelled and dated freezing container.

Freeze as for minced beef.

To Thaw:

Heat 4 spoons of oil in a large frying pan. Unwrap the hamburgers and fry frozen for approximately 10 minutes on each side or until cooked through and golden brown.

Our love for photography started on our travels. We wanted to capture images of the areas we travelled to both for our own records and for our family back at home. Our Family

Family is everything to me! We have a family of four boys where the age difference between the youngest and the eldest is 18 years. Two of our sons are also Gluten Free and Dairy Free. Emma is a Health Coach who specialises in helping individuals and families achieve their health and wellness goals. Ian runs his own business which began developing a Race Timer for diecast model cars.
