Oven Cooked White Bread Loaf
Gluten-Free and Dairy-Free
This delightful recipe is not only simple but also a firm favourite with my youngest child. I adapted it from a Dove’s Farm recipe, allowing me to utilise my own gluten-free flour.
The slice of bread featured at the top of the picture showcases my gluten-free all-purpose flour mix, while the lower slice is made using the original Dove’s Farm recipe.
For those interested in making this recipe their own, notes on my adaptations can be found in the additional notes section below. Enjoy baking and savouring this gluten-free treat!
Additional Notes:
Flour Substitution: Use your preferred gluten-free all-purpose flour for the best results.
Baking Time: Keep an eye on the bread, as gluten-free loaves may require slight adjustments to baking time.
Storage Tips: Store in an airtight container to maintain freshness.
Happy baking!
Ingredients:
500 g gluten free all purpose flour (recipe below)
2 tsp yeast
2 egg whites
1 tsp vinegar
6 tbsp oil
2 tbsp sugar
400 ml water
Method:
Line the loaf tin.
In a bowl, combine the egg whites, vinegar, sugar water, and half of the oil, whisking until well blended.
Add the flour and yeast, mixing until you achieve a smooth, thick batter. Pour the remaining oil over the dough.
Use a spoon to turn and bring it together to form a a soft dough mass.
Transfer the dough into the loaf tin, smoothing the top.
Loosely cover with oiled cling film and allow it to rise until it reaches the top of the tin.
When ready, preheat the oven to 220°C / 200° Fan / 425°F / Gas Mark 7.
Transfer to oven and bake for approximately 55 to 60 minutes.
To check for doneness, tap the bottom of the loaf— it should sound hollow. Remember, the bread and tin will be very hot, so exercise caution when checking.
Remove the loaf from the tin and let it cool completely before slicing.
Oven Stones: If you have oven stones, then place the loaf tin on these. I find it helps the bake.
Dove’s Gluten Free White Bread Flour: I adapted this recipe for my flour mix. You can use Dove’s Gluten Free White Bread Flour but you will need to add 1 tsp Salt to the ingredients list above.
Equipment Used:
Loaf tin (approximately 21 cm by 11 cm)
KitchenAid Stand Mixer
Spatula.
